Our Other Harvests

“The one who survives is the one who adapts”

Darwin

"The country spirit is rooted in our history. And in our countryside, diversity. Before us, our grandfather and his cows. The farm. Cereals, meadows, pastures and hay. Today, mixed farming feels like an adventure to us, but it is really a reconquest. The search for a necessary balance in our activities. Bringing other crops and other produce back to our winegrowing land. The way we see Thieuley and our Entre-Deux-Mers, it is a thread of our family culture that we are weaving."

Another fermentation story

"Marie is a winegrower.
But she is passionate about anything that ferments."

Another link leads from wine to the plate: vinegar, born of another delicious spell. It is a family tradition: here, we make vinegar. There is no winegrower’s house without its vinegar barrel. And we have also known for a long time that good vinegar can only be made from good wine. So let’s take the estate’s own wines and give it a try. First of all, what is vinegar? It is wine which, on contact with oxygen, allows bacteria to consume the alcohol and turn it into acetic acid. This is known as Mycoderma aceti, commonly called “the mother of vinegar”. In this process, the wine’s aromas take on new forms, on a sharper, “sour” foundation. Delightful chemistry. We have several wines at Thieuley, almost as many as there are intentions in a day. We will have several vinegars. The palette is taking shape across a range of colours and flavours. Seven wines that we have let turn to vinegar using the Orléans method: placed in barrels filled to two-thirds for a long fermentation at room temperature.

Just as vinegar is a living product, this collection will be a living one. Some numbers will disappear, while others will appear.

Marie Courselle · The Vinegar Workshop

THE VINEGAR BARN

In the heart of the “Bordeaux Tuscany”, this former barn, tucked away among the vines and olive trees, is a charming spot. It is here, between stone walls and beneath the timber roof frame, that we set up the vinegar house. About thirty barrels and about thirty demijohns. The barrels are filled to two-thirds, following the Orléans method. The vinegar will stay here. Good ventilation in the room is essential. Step out of the barn and you find yourself among the olive trees or beneath the horse chestnut tree and, a little further on, the vineyards on the hillsides.

The benefits of vinegar

Marie’s Notebook

LThe benefits of vinegar (when consumed in moderation) are countless. So are the different ways of enjoying it. d’où vient le vinaigre, To help you get to know vinegar, Marie has written a notebook explaining where vinegar comes from and the natural transformation behind it, but also its secrets of use and how to vary your seasonings… The notebook is available in the shop and is also given to everyone who tours the vinegar house!

The labels · 2025 Residency

Marie Veyron Bathellier,
"painter in residence at Thieuley."

The labels were created by Marie Veyron Bathellier, who came to Thieuley for a residency in spring 2025. This series of paintings was inspired by her visit to the vinegar barn, between vineyards and olive trees.

“Tasting and surprises, fascination with the diversity and beauty of transparent colours, subtle harmonies, colours, glimmers, baths of light. A pictorial work that seeks to create presence.
Her pigment gradations are juxtaposed and layered until they give material form to an emotion; her chromatic modulations, inspired by the surprising aromas of the vinegars, evoke a taste for delicacy.
A pictorial series like an ode to colour, radiance and lightness.”

Our olive groves

Olive oil

Less prominent in our landscapes than the vines, two olive groves have nonetheless found their place at the heart of the estate: one at Clos Sainte-Anne, the other close to our vinegar barn. These 80 olive trees were planted in 2010, at the same time as one hectare of truffle oaks. This project is part of our commitment to preserving and enriching our landscapes while promoting biodiversity, a core value of our approach to our work. In 2022, we discovered the Moulin de la Lèbe, in southern Gironde, paving the way for a new adventure. The following year, in 2023, the first Thieuley olive oil was born. Buoyed by this enthusiasm, we are continuing to develop our olive groves, planting 80 new trees in 2025 and around a hundred more in 2026. “The selected varieties (Aglandau, Picholine, Lucques, Bouteillan) were chosen for their remarkable organoleptic qualities, in order to produce an olive oil that is at once authentic, balanced and expressive.

Our other products

If you push open the door of our shop, you can see, smell and try other products. It is a way for you to “taste” our magnificent landscapes.

Floral waters

Obtained by distilling our various plants (flowers, leaves, aromatic herbs), these floral waters can be used in beauty products or in cooking. With no additives or preservatives, these floral waters are completely natural.

Honey

From our 5 hives, our production of wildflower honey is tiny. We often offer honey from local beekeepers who support us in our Bee Friendly approach.

Jams

There has always been an orchard at Thieuley! We harvest plums, nectarines, apricots and figs. As a rural tradition, making jam is a family pastime. Besides, the family recipes are kept secret…
